Yame is known for strong craftsmanship, with many small, quality-driven farms that emphasize flavor depth and sweet umami. It is known for gyokuro and heavy shaded tea suitable for premium matcha with toasted, nutty undertones.

Cultivar: Yabukita
Yabukita is Japan’s most popular, widely planted tea cultivar, accounting for over 70% of production, & is considered the “gold standard” or cornerstone flavor of Japanese tea. Registered in 1953 in Shizuoka, it is favored for its balance of high umami, refreshing sweetness, bright aroma, & light astringency.

Mild umami, balanced sweetness, slight bitterness, smooth & dense, bright green, vegetal aroma

Usucha, Clear, Premium Lattes

Pure Matcha 3g
Latte 6g

Recommended brewing portions:

Koicha or thick viscous matcha with a paste-like consistency. It is typically served at formal tea ceremonies and shared amongst guests. Great for when you want to savour the full richness of matcha but could be rather strong taken on its own.

Typical Matcha:Water ratio: 4g:30ml
Best served hot 70-80°C

For a treat, we recommend Koicha served over ice cream (Matcha Affogato) or over chilled milk (Dirty Matcha).

 

Usucha or thin matcha is the tea more commonly served at Japanese tea ceremonies. It is typically served to guests at the end of a meal and with a sweet to balance any bitterness of the tea. Great for enjoying matcha with a light, smooth taste. 

Typical Matcha:Water ratio: 2g:45-60ml
Best served hot 70-80°C

Clear Matcha or very mild matcha with the same nutrients in a cup. We recommend this drink for a fine balance of rich taste, aroma and colour which can be enjoyed longer than an usucha.

Serve Hot 70-80°C or over ice

Premium Latte A refreshing matcha latte made by whisking pure matcha with warm water to create a concentrated matcha tea. The deep and vibrant green matcha is then poured over milk. The result is a layered Matcha Latte with a light texture and naturally sweet undertone. Choose this if you like your matcha light, slightly creamy and refreshing.

Iced Latte:
Typical Matcha:Milk ratio 5g:150ml
